A Heater/Proofer is a unit used within the Food Industry to hold cooked food until it is served.  These are heated cabinets that come in both Half-Size and Full-Size, as well as Insulated and Non-Insulated.  Depending on the time range of how long you plan to hold the cooked product gives you a better idea of whether you should use an Insulated or Non-Insulated Heater/Proofer.  Non-Insulated units are best used for holding products between 1 to 3 hours.  Holding food for longer than 3 hours generally requires an Insulated proofer, to help cut down on electric utilization to maintain food at a set temperature.
